Makes 12–16 rolls
For the Filling:
- 2 tbsp olive oil
- 1 small onion , finely chopped
- 2 cloves garlic , minced
- 5 cups fresh spinach (or 10 oz frozen spinach, thawed and drained)
- 1 cup crumbled feta cheese
- 1/2 cup ricotta cheese (optional, for extra creaminess)
- 1 large egg , lightly beaten
- 1/4 tsp nutmeg (optional but recommended)
- Salt and pepper , to taste
For the Pastry:
- 1 sheet puff pastry (store-bought or homemade), thawed if frozen
- 1 egg , beaten (for egg wash)
- Sesame seeds or poppy seeds , for garnish (optional)
Step-by-Step Instructions
Step 1: Prepare the Filling
- Heat the olive oil in a skillet over medium heat. Add the chopped onion and sauté for 3–4 minutes , until softened.
- Stir in the minced garlic and cook for another 1 minute , until fragrant.
- Add the fresh spinach (or thawed frozen spinach) to the skillet. Cook until wilted and most of the moisture has evaporated (about 5–7 minutes ). If using frozen spinach, squeeze out excess liquid before adding it to the skillet.
- Transfer the spinach mixture to a mixing bowl and let it cool slightly.
- Stir in the crumbled feta cheese, ricotta cheese (if using), beaten egg, nutmeg, salt, and pepper. Mix until well combined. Set aside.
Step 2: Prepare the Pastry
- Preheat your oven to 375°F (190°C) . Line a baking sheet with parchment paper.
- Roll out the puff pastry sheet on a lightly floured surface into a rectangle (about 12x9 inches).
- Cut the pastry into strips, approximately 3 inches wide . You should get about 4–5 strips, depending on the size of your pastry sheet.
Step 3: Assemble the Rolls
- Spoon about 1–2 tablespoons of the spinach-feta filling onto one end of each pastry strip.
- Fold the corner of the pastry over the filling to form a triangle, then continue folding diagonally (like folding a flag) until you reach the end of the strip. Repeat with the remaining strips and filling.
- Place the rolls seam-side down on the prepared baking sheet.
Step 4: Add Finishing Touches
- Brush the tops of the rolls with the beaten egg for a golden finish.
- Sprinkle with sesame seeds or poppy seeds, if desired.
Step 5: Bake
- Bake for 20–25 minutes , or until the rolls are puffed up and golden brown.
Step 6: Serve
- Let the rolls cool slightly before serving. Enjoy warm or at room temperature!
