Incredibly, this cabbage soup recipe utilizes a whole head of cabbage all at once! The cabbage I purchase is usually tossed for weeks, mixed with kale, tossed in a bowl, and eventually used in tacos. As a result, I was taken aback the first time I prepared this recipe for cabbage soup. Half of the cabbage was added first. As it wilted, it dissolved into the soup, joining the aromatic veggies and herbs. I kept adding more since I was cooking cabbage soup and didn't want it to go. I had no idea how quickly all of the cabbage had gone into the soup!
