Ham and White Bean Soup


What you need:
1-tsp. of olive oil
chopped onion, one medium-sized
two stalks of celery, diced three chopped garlic cloves two medium carrots, diced
diced cooked ham (or 2 cups of leftover ham)
4 cups of broth, preferably chicken but with vegetables
the amount of water in four cups
Three 15-ounce cans of washed and drained white beans (like cannellini or Great Northern beans)
a single bay leaf
thyme, dry, 1 teaspoon
1.5 milligrams of dried rosemary
Toss with salt and pepper.
(for heat, if desired) 1/4 teaspoon of red pepper flakes
For the garnish, chop one or two tablespoons of fresh parsley.
