Egg Rolls with Peach Cobbler


 

Heat the oven to 400 degrees.


Cut the peaches into pieces and put them in a pan on the stove over medium-high heat.


Mix the cornstarch with the water and then pour it into the pan together with the sugar. Mix until the sugar dissolves and the mixture becomes thicker.


Add the vanilla, 1 teaspoon of cinnamon, and a bit of fresh lemon juice.


Take the mixture off the heat and allow it to cool.


Put an egg roll wrapper on a flat surface and add some of the filling to one side.


Fold the edges and roll up the egg roll.


Use a small amount of egg to seal the egg roll shut.


Put the egg roll in the melted butter.


Mix the brown sugar and 1 tablespoon of cinnamon in a bowl. Then, coat the egg rolls in butter and roll them in the cinnamon sugar mixture.


Put the egg rolls on a baking sheet lined with parchment paper and bake for 15-20 minutes until they are golden and crunchy.
