One egg
1 thinly sliced tiny onion
2 minced garlic cloves
Dry oregano, 1 teaspoon
fresh basil leaves, measuring one teaspoon
Toss with salt and pepper.
If desired, add 1/2 cup of marinara sauce.

How to Follow
Turn the oven on high heat (375°F, 190°C). Apply some oil to a muffin pan or use silicone baking cups to line it.
Remove any extra moisture from the grated zucchini by squeezing it with a clean kitchen towel or cheesecloth. If you want your meatloaf cups to stay together and not be overly wet, this is an important step to follow.
Bring together the ground beef, grated zucchini, Parmesan cheese, breadcrumbs, egg, onion, garlic, oregano, basil, salt, and pepper in a big mixing basin. Thoroughly combine all the components by mixing them together.
Fill each muffin pan cup halfway with batter and push down gently to compact.
Before serving, top each meatloaf cup with shredded mozzarella cheese and a little amount of marinara sauce, if desired.
The meatloaf cups should be cooked through and topped with a golden brown color, which should take around 25-30 minutes in a preheated oven.

After a few minutes of cooling, take them out of the muffin pan. Graze when hot and savor!
