Doritos Chicken Casserole

A tasty, simple, and fast casserole recipe with a Mexican twist: Doritos Chicken Casserole. Layers of seasoned and creamy shredded chicken, shredded cheese, and crumbled Doritos nacho chips are assembled to make it.

Once the mixture is hot and bubbling and the cheese has melted, the casserole is placed in the oven. Everyone in the family loves this dish, and even the most finicky eaters end up asking for more!

In addition to its delicious flavor, this recipe's ease of preparation is its greatest asset. Also, you can get it on the table in only 30 minutes from start to finish and it just calls for 7 ordinary ingredients!

Having cooked and shredded chicken on hand is essential for this 30-minute supper to be truly satisfying. That being said, you'll need either canned chicken, some leftover rotisserie chicken, or some chicken breast or thigh flesh for this dish.

Incorporate Rotisserie Chicken Leftovers
We usually spend around an hour on Sundays in the kitchen getting ready for the week's worth of food. The amount of time this has saved us on hectic weeknights is immeasurable.

And let's not forget about all the calories we may have saved by forgoing fast food or getting takeout for supper.

This Instant Pot Rotisserie Chicken dish is our favorite for meal prepping. This method is far more efficient than baking the chicken in the oven, and it yields a whole chicken in much less time.

The meat is then used for a variety of recipes all week long. With the meat, I want to whip together a salad, either Cobb or Avocado Chicken Salad, or Buffalo Chicken Wraps for lunch.

Also, I plan on making soups, burrito bowls, or casseroles with the remaining meat for dinner. Recipes like this Doritos Chicken Casserole, Chicken Enchilada Casserole, and Instant Pot Chicken Casserole are favorites for evening dinners.

If you happen to run out of shredded chicken, though, that's okay. A rotisserie chicken is readily available at most supermarkets.

On the other hand, you may cook and shred the chicken breasts or thighs just before you put the Doritos Chicken Casserole together if you're in the mood and have some raw chicken on hand.

Two cups of cooked and shredded chicken should be on hand prior to preparing this dish. It all comes together fast, so be sure to have everything you need on hand.

Chicken Casserole with Doritos Ingredients
Shredded and Cooked Chicken
This casserole dish's protein source is cooked and shredded chicken. Raw chicken should be cooked to an internal temperature of 165°F before shredding, or you may use drained chicken from a can, or you can use rotisserie chicken.

Two medium-sized chicken breasts or around half of a small rotisserie chicken will yield the 2 cups of shredded chicken called for in this recipe. But if you want to use canned chicken, you'll need four 5-ounce cans because half a cup of drained and shredded chicken is in one can.

A Blend of Mexican Cheeses
You can easily purchase Mexican cheese mix at any grocery store. Nonetheless, you may substitute any mix of Cheddar, Colby, or Monterey Jack cheeses.

Doritos Chicken Casserole's chicken stuffing requires just six simple ingredients.
Soup with Cream of Chicken
Doritos Chicken Casserole gets its velvety texture mostly from chicken broth reduced into a creamier consistency. While making your own is always preferable, if you must buy it, use the low sodium kind; the chips used in this recipe have a naturally salty flavor.

Cream of Sour
The sour cream's acidity goes well with the other tastes in this dish. But feel free to use low-fat, normal, or fat-free if you like.
