Chicken and Broccoli Casserole with Rice and Cheese


Is this the recipe for the best comfort meal ever? For many years, this chicken and rice casserole has been a staple in my family's diet. When you can make a rich casserole instead of separating the chicken, rice, and broccoli, why bother?

Chicken, Rice, and Broccoli Casserole Recipe
Butter, 2 tablespoons
Choose from 2 cups of chopped rotisserie chicken or 2 boneless, skinless chicken breasts.
1/8 teaspoon of Italian spice
Add salt and pepper according to your preference.
2 and a half cups of chicken base
3/4 teaspoon of olive oil
1 and 1/4 cups of uncooked white long grain rice
Two cups of raw broccoli florets
10.5 ounces.  Soup Base Made with Condensed Chicken Broth
half a cup of milk
30 grams of sour cream
Two cups of separate shredded cheddar cheese
Spices to Taste
thyme, dry, 1 teaspoon
half a teaspoon of flaked garlic
Side dish On top of
1 cup of crumbled Ritz crackers
2 tablespoons of butter, melted
Recipe for Chicken and Broccoli Casserole with Rice and Cheese
Get the oven hot, about 350 degrees.
Season the chicken with Italian seasoning, salt, and pepper to taste, then cut into bite-sized pieces.
In a large saucepan, melt the butter over medium heat. Cook, stirring occasionally, for approximately 5 minutes, or until the chicken is browned on both sides. Take out and place aside. The use of a cooked rotisserie chicken eliminates the requirement for this step.
Before reducing heat to a simmer, add the rice, chicken stock, and olive oil to the saucepan and bring to a boil.
Secure the lid and cook for seven minutes.
If using fresh broccoli, add it now and put the lid back on. Additional 8 minutes of cooking time is required. Hold your breath.
Take the lid off and turn off the stove. Do not stir the rice; let it stand for 10 minutes. There will be no sticking rice left in the pot.
Combine the cooked chicken with the soup, milk, sour cream, half of the cheddar cheese, and any seasonings you like.
Layer in a 9 by 13 casserole dish that has been gently oiled, then sprinkle with the remaining cheese.
After 15 minutes of covering, bake.
