Ingredients You’ll Need

Makes 8–10 bars

For the Base:

  • 1 ½ cups raw almonds (or walnuts for a different flavor)
  • 1 cup pitted Medjool dates (soft and sticky; soak in warm water if dry)
  • 1 cup gluten-free rolled oats
  • 1/4 tsp salt

For the Key Lime Filling:

  • 1 cup raw cashews (soaked for 4–6 hours or boiled for 15 minutes to soften)
  • 1/4 cup full-fat coconut milk (canned, for creaminess)
  • 3 tbsp fresh key lime juice (or regular lime juice if key limes aren’t available)
  • 1 tbsp lime zest (about 2–3 limes)
  • 2–3 tbsp maple syrup (adjust to taste)
  • 1 tsp vanilla extract

For the Coating (Optional):

  • 1/2 cup shredded coconut , toasted (for rolling)

Step-by-Step Instructions

Step 1: Make the Base

  1. In a food processor, pulse the almonds until finely ground. Add the pitted dates, rolled oats, and salt. Process until the mixture sticks together when pressed between your fingers.
  2. Line an 8x8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal. Press the base mixture firmly into the pan to form an even layer. Place in the freezer while you prepare the filling.

Step 2: Make the Key Lime Filling

  1. Drain and rinse the soaked cashews. In a high-speed blender or food processor, combine the cashews, coconut milk, lime juice, lime zest, maple syrup, and vanilla extract. Blend until smooth and creamy, scraping down the sides as needed.
  2. Taste and adjust sweetness or tartness by adding more maple syrup or lime juice as desired.

Step 3: Assemble the Bars

  1. Pour the key lime filling over the chilled base layer, spreading it evenly with a spatula. Tap the pan gently on the counter to remove air bubbles.
  2. Return the pan to the freezer for 2–3 hours , or until the filling is firm.
