1 lb (450g) Italian sausage (mild or spicy, depending on preference)
1 small onion, diced
3 garlic cloves, minced
4 cups (32 oz) chicken or vegetable broth
1 can (14.5 oz) diced tomatoes (with juice)
1 can (8 oz) tomato sauce
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon crushed red pepper flakes (optional, for a little heat)
1/2 teaspoon salt (adjust to taste)
1/4 teaspoon black pepper
1 cup heavy cream or half-and-half
1 package (16 oz) refrigerated cheese tortellini
2 cups fresh spinach, roughly chopped
Grated Parmesan cheese (for serving)
Instructions:
Brown the Sausage
In a skillet, cook the sausage over medium heat until browned and crumbled. Drain any excess fat and transfer the sausage to the crockpot.
Prepare the Base
Add the diced onion, minced garlic, chicken/vegetable broth, diced tomatoes, tomato sauce, basil, oregano, red pepper flakes, salt, and pepper to the crockpot. Stir to combine.
