🍤 Coconut Curry Shrimp Soup 🌶️


What you need:

450 grams (one pound) of shrimp, shelled and deveined
vegetable oil, 1 tablespoon
1 thinly sliced onion
3 minced garlic cloves
Minced ginger, measuring 1 inch in length
a tablespoon of red curry sauce
1 fourteen-ounce can of coconut milk
One tablespoon of fish sauce Three cups of chicken or veggie broth
Citrus juice from two limes
3/4 teaspoon of brown sugar
one cup of young spinach
One sliced red bell pepper
Garnish with fresh cilantro or basil.
Serve with lime wedges
Adjust with salt and pepper, if desired.
