For optimal browning, cook the ground beef in a large cast-iron pan. Once a crust forms, break the meat apart.
Brown the ground beef, stirring occasionally, until a deep crust forms on about half of it.
Take the beef out of the pan (save the grease), then add the onions, peppers, mushrooms, and butter.
After one or two minutes of browning, stir, and then wait another one or two minutes before stirring once more.
Replace the meat with the pan.
The cornstarch and beef broth should be combined in a small cup.
Incorporate the beef broth/cornstarch combination into the pan along with the ketchup, Worcestershire sauce, salt, and black pepper.
For three to five minutes, or when the mixture is just slightly liquid (within a range of 75–75% of the original volume), reduce heat to low.
After the heat is off, stir in the provolone.
Enjoyed with toasted brioche buns.
