Healthy Italian Meatball Soup


Set oven temperature to 375°F, or 190°C.
Make sure the morning sausage is cooked through by breaking it into pieces and cooking it in a pan over medium heat.
Before stuffing each biscuit with around a spoonful of cooked sausage and a sprinkle of cheddar cheese, flatten them down a little.
Pinch the biscuit's edges together tightly to seal as you fold them over the filling.
On a parchment-lined baking sheet, lay the sealed cookies seam side down.


The biscuits should be baked for 12–15 minutes in a preheated oven until they become golden brown.
Once taken out of the oven, let them cool for a moment before enjoying.


Tips and Variations
Hot sausage or a sprinkle of red pepper flakes added to the sausage mixture as it cooks will make it hotter. Consider using a plant-based sausage alternative if you're catering to vegetarians. Try using pepper jack for a little heat or mozzarella for a softer taste; you can also try using other kinds of cheese. For an extra flavorful touch, I sometimes stir in some sautéed onions and bell peppers with a tablespoon of filling.
