Cajun White Chicken Chili

Ingredients:
1 lb boneless, skinless chicken breasts
1 tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
1 bell pepper, diced (any color)
1 can (15 oz) white beans, drained and rinsed
1 can (15 oz) corn, drained
4 cups chicken broth
1 tablespoon Cajun seasoning (adjust for desired heat level)
1/2 teaspoon smoked paprika (optional, for extra depth)
1/4 cup heavy cream (optional, for creaminess)
Salt and black pepper, to taste
Optional garnishes: Fresh cilantro, shredded cheese, sour cream, or sliced jalapeños
Instructions:
1. Sauté the Aromatics:
Heat the olive oil in a large pot or Dutch oven over medium heat.
Add the diced onion and bell pepper, and sauté for 4-5 minutes until softened.
Stir in the minced garlic and Cajun seasoning, cooking for 1-2 minutes until fragrant.
2. Cook the Chicken:
Add the chicken breasts to the pot and pour in the chicken broth.
