Cut the crescent roll dough into triangles after unrolling it.
Onto each triangle's broad end, ladle some sausage mixture; then, using your fingers to seal the edges, coil up from the narrow end.
On a parchment-lined baking sheet, arrange the crescents.
For a glossy, golden coating, brush the tops with the beaten egg.
The crescents should be baked for 12–15 minutes in a preheated oven until they get a golden brown color.
