This creamy and hearty soup is packed with tender potatoes, flavorful chicken sausage, crispy beef bacon, and nutrient-rich kale. It’s the perfect cozy dish for chilly days and comes together easily in one pot!
Ingredients (Serves 6-8)
1 1/2 lbs Yukon Gold potatoes, diced
1 lb ground chicken sausage
6 pieces beef bacon, cooked and crumbled
5 cups chicken stock
1 cup heavy whipping cream
2 cups fresh kale, chopped
3 cloves garlic, minced
1 medium white onion, peeled and diced
1 tablespoon olive oil
1/2 teaspoon crushed red pepper flakes (optional, for heat)
Salt and black pepper, to taste
Instructions
1. Cook the Chicken Sausage
In a large pot or Dutch oven, heat 1 tablespoon olive oil over medium heat.
Add the ground chicken sausage and cook, breaking it apart with a spoon, until browned and cooked through. Remove from the pot and set aside.
2. Sauté the Aromatics
In the same pot, add the diced onion and sauté for about 3-4 minutes until soft and translucent.
Add the minced garlic and cook for another 30 seconds, stirring frequently to prevent burning.
