Comforting Stuffed Pepper Soup


This Stuffed Pepper Soup has all the delicious flavors of classic stuffed peppers but in a cozy, comforting soup form. It’s hearty, flavorful, and so easy to make—perfect for chilly nights or busy weeknights!

Ingredients (Serves 4-6)
1 pound ground beef or turkey
1 large onion, chopped
2 bell peppers, chopped (any color)
2 garlic cloves, minced
1 (14 oz) can diced tomatoes
1 (14 oz) can tomato sauce
4 cups beef or vegetable broth
1 teaspoon Italian seasoning
1/2 teaspoon smoked paprika (optional)
1/2 teaspoon salt (adjust to taste)
1/4 teaspoon black pepper
1 cup uncooked rice (white or brown)
Optional Garnishes: Fresh parsley, shredded cheese, or sour cream
Instructions
Brown the Meat

In a large pot or Dutch oven over medium-high heat, cook the ground beef (or turkey), breaking it into crumbles as it browns. Drain any excess grease.
Sauté the Vegetables

Add the chopped onion and bell peppers to the pot. Sauté for about 5 minutes, until softened. Stir in the minced garlic and cook for another minute.
Add Tomatoes and Broth

Stir in the diced tomatoes (with juices), tomato sauce, beef or vegetable broth, Italian seasoning, smoked paprika (if using), salt, and pepper. Bring the mixture to a boil.
Add Rice and Simmer
